How do Growing Degree Days predict crop stage?

The short answer
Crops don't read calendars — they accumulate heat. Growing Degree Days (GDDs) add up how much useful warmth a field has received since planting, and they predict growth stages far better than “days after planting.”
Two fields planted the same day can be a full leaf stage — or a full week of pollination risk — apart, just from temperature differences. Track heat, not days.
